Banana Bread - 2 ways!

The smell of freshly baked banana bread is really something special. It gives me all the feels & I almost always cut right into it & enjoy a slice right out of the oven. I would normally tell someone else to wait completely until it cools down to cut into the loaf but since honesty is the best policy, I just can’t control myself and dig in right away. 

I’ve been playing a lot in the kitchen lately with grain free + vegan recipes because I have so many customers who ask me for grain free options. I love that I can make my recipes that normally include grains (most of the time it’s ground oats) and substitute it for ingredients such as almond and coconut flour and a beautiful creation is formed. 

Below I have both my regular banana bread recipe (vegan, gluten free + naturally sweetened) and my new grain free recipe (vegan, grain free + naturally sweetened). I hope you enjoy it! 

Vegan + Gluten Free Banana Bread

 Ingredients:

·  1/4 cup olive oil

·  2 frozen bananas*, 2 very ripe bananas

·  1/4  cup maple syrup

·  2 tsp natural vanilla 

·  1.5 cups gluten free oat flour (simply grind your oats in the blender to make a flour!)

·  3/4 cup almond flour

·  1 tsp baking powder 

·  1/2 tsp baking soda 

·  1/4 tsp himalayan sea salt

·  3 tbsp. shaved dark chocolate (you can use chocolate chips)

 Instructions: 

1.    Oil an 8-inch loaf pan and set aside. *I normally place parchment paper on the bottom of the pan as-well.

2.    Combine bananas, olive oil, maple syrup and vanilla into a blender and blend until combined.

3.    Add in all remaining ingredients (except chocolate) until blended. 

4.    Mix chocolate in and pulse. 

5.    Pour the batter into loaf pan and spread evenly.

6.     Bake for 60 minutes.

7.    Let the banana bread cool (I know… it’s hard!) before slicing!

* If you don’t have frozen bananas, just substitute it for ripe bananas!

** You can add in 1 tbsp. of almond butter, peanut butter, etc. of your choice to the batter before baking! 

 

Vegan + Grain Free Banana Bread

 Ingredients:

· 1/4 cup olive oil

· 2 frozen bananas*, 2 ripe bananas

· 1/4 cup maple syrup

· 2 tsp vanilla

· 2 cups almond flour

· 1 tbsp. almond butter (or any other nut butter)

· 1 tsp baking powder

· 1/2 tsp baking soda

· 1/4 tsp himalayan sea salt 

Instructions: 

1.    Oil an 8-inch loaf pan and set aside. *I normally place parchment paper on the bottom of the pan as-well.

2.    Combine bananas, olive oil, maple syrup and vanilla into a blender and blend until combined.
